Seared scallops and sugar snap peas with bacon vinaigrette

If you’re looking to impress without spending all day in the kitchen, we’ve got the recipe for you.

Bacon and scallops always pair beautifully, and this straightforward but fancy-looking dish only uses a handful of ingredients. Start by frying your bacon in a pan and then replace the bacon with scallops-searing them in the bacon drippings gives them a nice caramelized crust—just two minutes on each side should do it.

To make the bacon vinaigrette, remove the scallops from your pan and pour in a quarter cup of white wine vinegar, a dollop of Dijon mustard and some cream. Stir this together while scraping the bacon drippings from the bottom of the pan to incorporate all ingredients.

Plate your scallops, drizzle with the vinaigrette and top with bacon pieces—serve with a good baguette for mopping up any extra bacon vinaigrette and you’re set. We also chose to pair this with sugar snap peas-boil in salted water for 5 minutes and drain.

With this simple seafood supper, you’ll be eager to keep date night at home.
