Scottish Shortbread

We’re heading to the Highlands with this one-bowl recipe for delicious Scottish shortbread cookies.

This traditional cookie, dating back to the 12th century, was once reserved for special occasions, but, lads and lassies, don’t dismay, you can experience this Scottish specialty any day.

Soft and buttery, these cookies are as simple as it gets. Mix butter, flour and sugar and bake for half an hour. Let them cool and slice them any way you like.

Down ‘em with a shot of espresso or a cool glass of milk and you’ve got the perfect afternoon delight.
